This Pan Warps! By A3CSV0T7BM30VK on 2007-10-28
This pan warps! The 13 gauge from Amazon did not fare well. I got mine in yesterday and tried it in a 500 degree oven to find it warped badly! I was doing the roasted pear recipe from Cook's Illustrated which calls for you to preheat the baking sheet prior to placing the pears tossed with butter and sugar. It warped after the first use! I was very disappointed as I bought this pan after Cook's Illustrated rated it as its top recommended pan. Cook's Illustrated said the "search was over" and that this pan does not warp. Well mine warped after the first use! I posted pictures of the pan in the customer images for all to see. The picture of my warped pan says it all.
Check your bottom... By A1TJ8L9TEVRS03 on 2007-11-19
I ordered these pans from Next Day Gourmet and received the wrong pans...twice! If you're experiencing warping, check the bottom of your pan to see if it's labeled "Ecko" rather than "Lincoln Foodservice". Apparently Next Day Gourmet is substituting the Ecko pans for the Lincoln Foodservice pans and the Ecko pans do not have the reinforcing wire around the perimeter for strength. I have returned the pans (yes, twice) and cancelled my order. To Amazon's everlasting credit (no pun intended), they issued a prompt, full refund -- including freight.
One out of two ain't bad? By A2TOFPLDRJ3AEJ on 2007-11-01
I used these pans today for the first time. I did so reluctantly because I read the boards on the Cook's Illustrated website and the ratings weren't too great. I bought two pans. One was perfect and roasted with no problems at 400 degrees. The other one warped at 475 degrees. Not sure what to make of it. The one that warped still remains slightly so even after cooling down. All I can say is buy at your own risk. I'm thinking of trying Sur La Table's new brand. It says no warping on the packaging and you get two pans for 20 bucks. They do not mention the gauge, however. These Lincoln pans are 13 gauge which is the thickest supposedly. (The higher the number = less gauge.) Thickest is supposed to be the best according to the CI boards, less condusive to warping. C'est la vie...
Update: 11/2/07 The pan that warped slightly has straightened itself out. I simply stacked the two pans overnite and voila! So if I could, and Amazon won't let me, I would change this rating to FOUR stars.
The best sheet pan out there By A2PRW52Q3ZN6VN on 2007-10-31
High quality, lightweight, strong, and best of all DOES NOT BEND in the heat. Rated the best by America's Test Kitchen, and well worth it.
Finally: A really sturdy baking sheet. By A1OAM0D27ZD001 on 2007-11-04
I ordered this product based on a review and recommendation in a recent issue of Cook's Illustrated. I have not been disappointed. It is truly "heavy duty," as advertised. I have used it successfully for baking, broiling (along with an equally sturdy rack) and roasting. I recommend it highly.
- Looks like Cook's Illustrated picked the wrong week to quit sniffing glue.
     By AAUQ28U75SOBL on 2007-11-16
I, like several other reviewers, bought this pan because Cook's Illustrated recommended it. It warped the first time I put it in a 375-degree oven. The disconnect between the Cook's Illustrated review and my own experience was so baffling I called Lincoln Foodservice and read the markings off the back to make sure it was really their pan. I can't imagine what Cook's Illustrated was thinking when they recommended this cheap, flimsy pan. Two stars instead of one because you get what you pay for.
- Mine warped too
     By AMT1NWE3CY5DE on 2008-01-12
I too purchased this pan because it was recommended by Cook's Illustrated. 10 minutes in a 400 degree oven was all it took to warp my pan. I called the company and they agreed to take them back. They are paying for return shipping, but we'll see if they reimburse me for the shipping I paid to have them delivered to me...
Tip: Go to your local restaurant supply store. They are bound to have half-size heavy duty sheet pans for half the price, and no shipping charges!
- Excellent pan!!
     By A3EFBHSHSK3D1Q on 2008-02-19
I also chose this pan because of the recommendation on America's Test Kitchen. I preheated this pan at 475 and baked honey drizzled sweet potatoes on it. It didn't stick, was easy to clean..and most definitely didn't warp. I noticed the picture someone posted of their pan that warped. The bottom of mine looks different. It says No. 5303, Lincoln-Wearever. Fort Wayne, In. Made in USA 2007-4. I wondered if maybe they had received a different pan. This pan was everything America's Test Kitchen said it would be. I have no regrets at all..it's as close to perfect as a 1/2 sheet pan can be!
- Warps at high heat.
     By A1S52BN2HMJRGA on 2008-03-17
Got three of these based on the Cooks Illustrated review. Two of the three have warped so far when the temp gets above 450. I haven't used the other one yet at high heat because I want to keep at least one flat one! There are really two things you need to know about this pan: (1) There seems to be a variation in thickness from one pan to another, which probably accounts for the sometimes-it-warps, sometimes-it-doesn't opinions you see on these reviews. My caliper shows a significant variation, which suggests that the factory where these are made isn't as committed to quality as the company that ordered it! (2) The material is important - these are aluminum. Most reviews haven't focused on the fact that these will come out of the dishwasher looking like they were beadblasted, and will stain if used to cook anything acidic. That said, you're not going to find more metal for the money, as these are more sturdily built than most noncommerical stuff, AND although warp is annoying it only occasionally effects anything.
- If used carefully, about the best you can find!
     By A1AXBZ0ZA7JA60 on 2007-11-12
I have had the, 13 gauge , Lincoln half sheet wearever 5314 for over a week now. I have used twice. Once for biscuits and once for fries. Last night I was brave and placed steak fries on the pan and put all into the 450 degree preheated oven for 25 minutes. It did not warp!! The pan washed up great both times I used it. After reading all the reviews, some not good, I was a little apprehensive about keeping it until after last nights test. I believe it is the best you can buy for the money. I would advise all to hand wash it so it will retain the glossy finish. I understand dishwasher dulls it. The quality seems to be great otherwise, rolled edge etc. However, using it at 475 or 500 is a gamble. Regardless of where we read it was safe to do so, the article is not as good as reading these reviews. More tests have been used under these reviews it seems. So I would say go by Amazon reviews and enjoy the pan.
- Disappointed!
     By A24V75LROOA72Y on 2007-11-13
As some have stated previously, this pan warps! I also purchased this pan due to it being recommended by Cook's Illustrated and having purchased other items that they have recommended I was sure it would be fantastic (as all others have been), but after using it just a few times, I was disappointed to see that it had warped. I have used it mostly to make biscuits in a 475 degree oven and the pan is now so seriously warped and I am seriously frustrated at that. I would try another pan that Cook's Illustrated recommends as I do not believe this pan is worth your money.
- The search continues....
     By AY5HJ2VW0AMAK on 2008-01-02
I bought this pan like so many of you, because of the rave reviews it recieved from Cooks Illustrated magazine but it did not perform well. It warped during it's first use in a 450 degree oven. I am usually so happy with Cook's suggestions but this one was a bust.
- These work extremely well
     By A230N3R09GIR35 on 2007-11-11
I ordered these on the recommendation of Cook's Illustrated. They do not dissappoint. They work well for all baking uses. My only comment is that the nice shiny finish disappears once put in the dishwasher, but that is certainly not unique to these pans; it happens to any pan made of this material.
- sheet pan warped
     By AHMRG44R74NMR on 2007-12-03
I bought this sheet pan because it was rated the highest at Cooks Illustrated. I cooked Pumpkin pie for Thanksgiving @350 degrees. I placed the pie on this pan to prevent spills. It warped in the first 3 minutes and my pie filling jumped out of the shell- This pan certainly did not perform to the "Cook's standard".
- The best pan at the right price
     By AKORWBWZZ5Y0L on 2007-12-27
I, too, chose the Lincoln Foodservice 1/2 sheet pan based on Cooks Illustrated's review, and I was not disappointed! I got this pan from mvtradingonline, and have had no problems with it at all. I also bought the 1/2 sheet professional crosswire rack that fits perfectly inside it, from Ram kitchen supply here on Amazon. Very sturdy, no warping, and they've held up to just about everything I've thrown at them! Make sure you've got the right pan when you receive it. It should be stamped in the center on the back: No. 5503 Lincoln Wearever. If it isn't, you've got the wrong pan. I just ordered my second set of pan and crosswire rack.I never put any metal or nonstick bakeware or cookware in my dishwasher, only glass. They usually don't need anything but a quick wash & dry.
- This Item is WEAR-EVER #5314 Half-Sheet Pan
     By A3136U3VDGMQ4R on 2008-08-08
WEAR-EVER #5314 = 17¾" x 12-7/8" 1" [NSF rated] Natural (shiny) Finish, 13-gauge AA3004 Aluminum, with an OPEN BEAD surround (i.e., there is a lip but not a "rolled" edge bead surround).
The WEAR-EVER Part Number is stamped into the metal on the underside of every pan.
Take care not to confuse this item with the quite similar: WEAR-EVER #5303 = 17¾" x 12-7/8" 1" Natural (shiny) Finish, 18-gauge AA3003 Aluminum, with CLOSED BEAD surround (i.e., a "rolled edge" with a galvanized steel wire-bead insert)... #5303 is a fine pan, itself, but somewhat lighter in weight (and with the rolled bead, arguably more ergonomic). The type #5303 is a Half-Sheet Pan which usually sells for a few dollars less than the heavier, NSF-rated WEAR-EVER #5314.
WEAR-EVER also make a #S5303 variant (with a Wear-Guard coating), costing almost twice as much; as well as a #5303P variant (perforated); and they also make a MUCH lighter-weight, 19-gauge #9303 "economy" variant, which costs only half as much as the Half-Sheet Pan pictured here.
The "Cooking Rack - CIA Masters Collection" is an ideal accessory for these pans, as is the "Silpat 11-5/8-by-16-1/2-Inch Nonstick Silicone Baking Mat", or equivalent, sold separately here on AMAZON, and elsewhere.
fwiw... Baking Pans are usually bought, and often used in pairs; regardless of Part Number / variant they are all stackable, one inside another; and personally, in my modest home kitchen I found one #5314 Heavy-Duty and one #5303 Standard Pan, along with one nice cooking/cooling rack and a silicone mat accessory to be the ideal set solution.
- indestructable
     By AUOSU6UN3HY45 on 2007-10-23
The delivery box my pan came in was delivered severely damaged. The freight company had labled the box "damaged", had opened the box to check damage on pan, found it completely untouched, relabled the box "ok" and broght it to my front door. I look forward to using this product that kept it's structural integrity so well.
- My new favorite piece!
     By A3B5QIARTGJ2X0 on 2007-11-06
This pan is now the most important cooking tool I own. It beats all other baking sheets, hands down. It heats evenly, doesn't warp or bend, even at 500 degrees, and is a joy to use. I highly recommend it!
- why clutter your kitchen with any other baking sheet?
     By A282HZDS4ZPCRT on 2007-11-22
this very heavy duty sheet pan, with its 1/2 inch lip can take the heat without warping, is the perfect size, cleans up easily, and is especially multi-functional. the 13 gage is what you want (not the 18 gage, which is too light weight). combined with a grid-style 'cooling' rack, it is a kitchen workhorse.
- Baking pan
     By A14FJYQY112MB on 2007-12-03
Every year my bride and I bake over 3,000 cookies, over 40 loafs of bread and make more than 130 jars of jelly for Christmas gifts. We have used the same pan's for 22 years. We decided that this year we would try some new pan's. These pan's are working out great. They will be a real great addition to any bakers kitchen.
- Mine warped too.
     By AZ10NR3YO6D4K on 2007-12-07
I purchased this pan, like some of the others, based on a Cooks Illustrated review. I was excited when I received it as it seemed quite sturdy. All pans I've had in the past have been cheaper, flimsy ones and all warped and "bent" in the oven. I used this new pan for the first time on Thanksgiving in a 450 degree oven and it warped after being in the oven only 10 minutes -- one of the corners "bent" up, just like all of the other pans I've had in the past. Disappointing -- and surprising -- especially since it does have a "heavy duty" feeling to it.
- NICE sheet pan!!
     By AO3XN9ISJCNKM on 2008-01-27
I did read the recommendation for this pan in Cooks Illstr'd and was intrigued. I read most of the Amazon comments but still had to try it and what a delightful pan this is!!! have thus far made cookies and bisquits on it (never over 400 degrees yet) and they've been perfecto! My Walmart/Target bought cookie sheets that are darker than night always need parchment or a silicone sheet. no need on this one...yet! if you like to cook and like nice color on the bottom of your baked goods then this sheet pan is for you! easy clean up and no warping thus far!!
- Excellent Sheet Pan
     By A29D1OT6BXD6GC on 2007-10-30
I've used this for cookies, for oven roasting potatoes, and with a rack, for roasting chicken pieces. It's great and has cleaned up easily. I highly recommend it.
- Lived up to expectations.
     By A2JSKK8HH7S0WL on 2007-12-28
I purchased these pans on recommendation from Cooks Illustrated (their product review). And, true enough, these pans are WONDERFUL. Heat evenly, no sticking, sturdy, no bending at high heat...HIGHLY RECOMMEND.
- Does not bend
     By A1M841R4VB4AVY on 2008-01-20
This pan does not bend in the oven, even on broil in our Viking 36 inch gas range. Enough said. Buy it.
- Solid pan
     By A2L5L5UQ8MJ50 on 2007-11-24
Very nice, heavy pan. Just the right size for misc home use. A sheet of foil fits perfectly.
- Sheet Pan
     By A25SVTY9BS6I62 on 2007-11-25
This half sheet pan exceeded my expectations. It does not warp and parchment paper fits into the pan nicely. Only wish I had ordered 2.
- Pan less than terrific
     By A2YLKA736LZ1T1 on 2007-12-06
This pan looks great: large, with good sides, as if it could do any number of chores. It probably can, but the one chore I most need it for--broiling--seems beyond it. It buckles, so that a quarter of it rises and tips its contents. However, it washes easily, and will even fit in the dishwasher, if necessary.
- Simply the Best Sheet Pans
     By A2MVLOUT53H65D on 2007-12-28
These sheet pans are simply the best. They are rigid with no flex (a very rare thing for sheet pans) and are made of solid aluminum. Additionally, they are priced at a very fair price. Some brands of high end models cost two-to-four times more. Great Value!
- Merry Christmas - this was a gift that I purchased for me
     By ACK4GVQ06FMAZ on 2007-12-28
Love it. Is a sturdy well made pan, am looking forward to using it for many years.
