  • Very Nicely-Built Aebleskiver Pan

    I've been cooking aebleskivers for several years in an excellent no-name cast iron pan that I bought in Solvang ten years ago. It is very well broken in with a smooth non-stick patina in all seven indents. I want to teach my sons how to cook aebleskivers themselves because they will be out on their own soon, and it never hurts to be able to attract a woman who loves Danish delicacies!

    Therefore, I have been looking to buy some additional aebleskiver pans and I was excited to see this new pan from Lodge, so I ordered one to give it a try. I like the design a lot and am impressed with how it heats up quickly and holds it's temperature nicely. The first batch of aebleskivers had some sticking, but I expected that. I will need to use it a lot more before it has the same non-stick surfaces as my old pan (no, it's not for sale!), but I can tell that this pan will get there with use.

    By the way, I've found that there are many recipes for aebleskivers and several different techniques for cooking them. I'm sure that they all will work well with some practice, but I'll describe the one that I've settled on, because it is so easy:

    Heat the pan at a medium-low setting. Take about two cups of prepared pancake mix (I use Krusteaz Buttermilk) and add a couple of teaspoons of sugar. Mix it in and stir in enough cold water to make the consistency about the same as you would for drop bisquits. Don't overmix it and let it sit for awhile to rise a bit before you cook it. Put a little butter or margerine in each indent and add about a teaspoonful of batter to each indent (If you're new to aebleskivers, I recommend trying only three at once.) I then drizzle a little butter on the edges of each indent. After about a minute, I use a knitting needle (or chopstick) to turn each aebleskiver one quarter turn. I add a little more butter and then turn them so the round side is up. I keep turning them with a spoon until they're done. (You'll just have to break one of them open to check, because it's dependent on your batter and temperature.)

    Once you get it down (usually after a few rejects), serve them in threes on a small plate with thinned out raspberry jam and powdered sugar. Once you eat them, you'll understand why people go through all this just to make a pancake that looks like a racquetball!

    The pre-seasoning of this pan really does work! It gives you about a year or two head start on the seasoning. My first use, I just brushed the wells of the hot pan with butter and put the batter in. No sticking at all. The price on Amazon is great, too!
    Ingredients
    ○ 2 cups all-purpose flour
    ○ 1 teaspoon kosher salt
    ○ 1/2 teaspoon baking soda
    ○ 2 eggs, separated
    ○ 1 3/4 cups buttermilk
    ○ 4 tablespoons unsalted butter, melted (more melted butter to brush in the pan)
    ○ cardamom or cinnamon to taste (optional)
    Directions
    a. Put the aebleskiver pan on a medium-to-high heat.
    b. Whisk the dry ingredients together. Whisk the egg yolks with the buttermilk and melted butter in a separate bowl.
    c. Beat the egg whites until they just hold a 2-inch peak. (don't over beat.)
    d. Add the liquid buttermilk-butter-yolk mixture to the dry ingredients in a slow, steady stream while gently mixing with a rubber spatula. You should still have large patches of dry ingredients by the time you finish, this is more wetting of the batter than mixing.
    e. Fold in the egg whites, again with a light touch.
    f. Brush one of the hollows with some melted butter. Then take a small ladle or big spoon and fill the hollow not-quite-to-the-top with batter. Depending on how hot your pan is, you may need to add batter quickly so the butter doesn't hit its smoke point. Fill the other hollows the same way.
    g. By the time you've finished filling the last hollow, the first one should be just about ready for turning. Take your knitting needle (or wooden skewer) poke it into the crust with your poker and pull upward. The idea is to pull the semi-spherical shell up out of the hollow. Push it so it caps off the hollow, allowing the uncooked dough from the center of the shell to fall into the hollow. Repeat for the other hollows.
    h. Now it's just about turning the balls every now and then to give them an even heat. Remove from pan when a toothpick comes out clean, usually about 5 or 6 minutes. The aebleskiver should be brown (not just tan).
    i. Serve immediately with some thinned raspberry jam.

    This Aebleskiver pan does double duty in our house. First, of course, it does wonderful aebleskivers. However, I do not make them all of the time but I do make muffins quite often so the pan also serves as a little muffin pan. The pan will hold one package of muffin mix like a Martha White and it will get you seven nice little golden-crusted muffins. My son calls what comes out "cute little mushroom muffins." I am tempted to get a real cast-iron muffin pan because this one does so well.

    Well, chances are you already know the answer to that if you are looking at this item. If you don't, it's sort of an apple doughnut hole. They are delicious! I bought this pan over the others displayed because it appeared to be the most durable, and thus far has fulfilled my expectations. Buy it, and start enjoying.

    I only wonder why I waited so long to get one of these pans. It is very easy to use and I've been experimenting with recipes from the Aebleskiver and More cookbook, which I bought at the same time, as well as recipes from several on-line sources. Great. Easy. Fun to do and they add a lot of eye appeal, as well as a delicious treat to the table. I saw one of these pans almost 20 years ago in Solvang, CA, and didn't buy it because we were flying home and I didn't want to put it in my suitcase. Have been looking at them ever since and thinking one day I would get one. Have recently retired, the time is now! I just love it.

    This is a wonderful pan, nice and heavy, preseasoned. The aebleskivers didn't still even the first time I used it. It has a great size and weight to it. Much nicer than the cast aluminum pans in my opinion.

  • Alternative to pancake puffs

    My 10 year old son saw a commercial on TV for "pancake puffs" and asked if I could make them. After doing some research, I found out the pancake puffs are amercanized versions of danish aebleskivers. I bought this pan to try them out. The pan worked beautifully. I used bisquick mix for the batter and butter in the pan. After a few tries, I found the right combination of heat, butter and batter and the aebleskivers were delicious. The pan is heavy cast iron and seasoned quickly. Directions are included for seasoning the pan with oil. I'm sure the pan will only cook better with time, but it was pretty close to perfect on our first use.

    I'm a big foodie, yet I've never had an aebleskiver before. But they looked like a fun, tasty item to make, so when my wife asked if I wanted anything to help her get free shipping, I had her add one of these pans on while it was on sale.

    It arrived with basically no instructions, so I went off to the internet for recipes, all of which required ingredients I didn't have. So I noticed that someone had used a Krusteaz pancake mix with a little sugar added...so I decided to wing it.

    I rinsed the pan with hot water and scrubbed it a bit (the pan is pre-seasoned with a pretty good coating already), put it on an electric burner to preheat for a bit (it looks like it would work better on a gas stove, but with some preheating time, electric works just fine), added about a teaspoon of oil to each divet, and added some Krusteaz mixture. The first three were pretty much a disaster leaving little chunks behind in the pan. For some reason (more preheating? a little more oil?) the next batch came out better, and the final batch of 3 or 4 came out in perfectly shaped little balls. And EXTREMELY tasty. The pan cleaned up easily, and I've made at least one batch every day since (however I'm almost out of mix now!).

    i admit it. i bought this pan merely because it looked cool (and i was in the process of accumulating lots of cast iron pans). i had never had an aebleskiver before.

    this pan is incredible! i have since used it to make aebleskivers, and they are pretty good, although i guess i'd rather have pancakes or french toast. but, the pan is SO well seasoned that any accidental drips on the top can just be wiped off with a dry paper towel after the cooking is finished.

    it's also a fun shape! we have made yellow cake aebleskivers (which are good! dip them in icing) and plan to make other cakes etc.

    I had never had Aebelskivers before buying this pan. Like other Lodge products, I found it to be of high quality and easy to use. I bought the "Aebelskivers and More" booklet from Amazon with it and had no problem making perfect Aebelskivers the first time. I put a teaspoonful of lingonberries or black currant preserves inside each one (or use any good quality preserves), and a light dusting of powdered sugar on top when their done. One warning though: If you have small children, be prepared to make lots of them. My eight-year-old daughter describes them as "the best doughnuts in the world."

    There are other aebleskiver pans on the market that can probably do just a capable job as this more pricey pan with limited use. One pays extra for the Pro-Logic finish which wears off in time anyway. It would have been a nicer touch if Lodge included a few recipes to help us to start off with. IMHO I would recommend buying one of the less expensive pans unless you plan on making pancake balls quite often.

    My girls and I have had great fun making Aebleskivers, and this pan does an excellent job. It came seasoned, which was nice, and so long as you use a bit of butter every third batch or so, nothing sticks and they come out fantastic.

    My best results have come from thinned out Swedish pancake mix.

    A fun pan to have! I used a recipe I found on the internet. It does take practice, but by the time I did the last couple "rounds" they were perfect! You can't go wrong with a Lodge cast iron pan, always even heating and quality made.

    I ordered this pan after a long time with a little bit of doubt in my mind.
    But now I think I should have ordered it before.The pan worked great from the beginning.Only thing is you need to be careful with the handle since it gets hot.

    I was very anxious to receive the Aebleskiver Pan. It came very quickly and I put it to the test immediately. It worked great. I was so pleased with the pan. It is already pre-seasoned so I only used a little bit of Pam. My Aebleskiver's came out delicious and very easily out of the pan. I would recommend this to anyone that likes to cook or bake. You could also make corn muffins in this. A fantastic pan. Thank you.

    I bought this as an alternative to the Pancake Puff pan as that product did not have favorable reviews. I'm glad I did. I love this pan. It's super easy to use, super easy to clean and we all love the puffs we've made. This is a high quality product I would certainly recommend. I'm sure we'll have many years of use out of it.

    I had never heard of this type of pan before, and a Gold Box deal sparked my interest. After reading all the reviews, I elected to purchase the Lodge Pro-Logic model. The pan is well seasoned, and works impressively well. My kids and family were fascinated by the idea of round pancake balls. I used the Krusteaz mix recipe submitted by another reviewer. The first batch was a learning experience, but subsequent batches turned out perfect-brown and crispy on the outside, sweet and moist on the inside. Thanks for the new experience, Amazon!

    I have wanted this type of pan for so long and found so many choices...but when the reviews were read, this is the pan everyone liked. I love this pan...a heavy, quality piece so well thought out and constructed. The extra handle and the flat ring on the bottom keep it steady on the gas ring. I use the Bisquick recipe and two bamboo skewers to turn the little puffs. They are a joy to make and so easy. My family likes them dipped in syrup, or sprinkled with powdered sugar with preserves on the side. The pan is so easy to care for...I just run it under the hot tap and let it dry on the hot gas ring. I did try the oil in each cup...but found that Pam did a better job. Amazon was so fast with its delivery...I received it within a few days of purchase. We travel between Florida and Maine and this will go with us. Great product. I love it.

    I researched this product and found the lodge cast iron - already seasoned pan to be the best. It releases the cooked product every bit as good as a synthetic coating & is safer. It's cast iron quality distributes the heat evenly. Amazon.com came up with the best price & shipping options also. And I'd been at 5 or 6 different sites. I like cooking - so, it was a new & different way to present a b'fast, lunch or dinner....depending on what you put into the "pancake". Everything I wanted to know about this product was listed. ie: that the handle is cast iron as well, & gets hot also. That you will need something to turn the pancakes with...and they're not included. Nor is recipes. There were no unpleasant surprises.

    With a little practice, you can whip up a batch of delicious pancakes in no time. Practice, because the first batch I made had too much batter which overflowed and the second batch was overdone because the pan retains heat so like any cast iron product additional batches need less heat. Experimented with temperature and portions; third batch was a winner! Couldn't be easier to clean and it arrived preseasoned so you can start cooking right out of the box. Highly recommended.

    This pan is seriously made to last. It is heavy yet compact and could probably even be used over a campfire if you couldn't leave it behind, though I've never attempted it.
