When I was first married over 30 years ago, I remember my mom saying that even if it seemed extravagant, it was worth it to buy quality cookware. So listening to mom, we used our wedding gift money and bought the top of the line cookware. I am still using that same dutch oven, sauce pan, and skillet, and right now I think they will probably last longer than I will!
Well, when I first saw the price of the Baker's Edge Pan, I hesitated. I knew the concept of the pan was terrific. I read all the reviews, and I really felt the design of the pan would produce better brownies, breads, casseroles, and just about anything I wanted to try.
Well, I remembered my mom's advice and decided to purchase the pan. It has exceeded my expectations as far as even cooking, perfect pieces, nice edges, and even beautiful presentation.
In addition, the quality of the pan is amazing. When I think of how many cheap 9x13 pans I have bought over the years, I knew I should have applied my mom's cookware rule to bakeware. Most baking pans warp over time or cook unevenly because they are so thin. This pan is unbelievable as far as quality construction. I feel it was a very economical purchase because with proper care it should last forever! I can't imagine needing a replacement. However, since the pan is so versatile, I would readily purchase another one - using one for a main dish casserole and another for dessert! I sincerely recommend this pan for your bakeware collection

In our house, we're always fighting over the brownies at the edges and corners (no one likes the gooey parts.) With this pan, we all get what we want. Plus, I can add walnuts to my portion without impacting anyone else's part. I tried the banana bread recipe that came with the baker's edge this week and it's a very good recipe. You need to treat the pan gently, so no metal implements, and no metal scrubbers. I wish there were more products like this.

I've been using this pan for a few months and I love it. It's makes terrific brownies and the non-stick surface releases them with the greatest of ease. Things cook evenly so no more dry edges and too-gooey centers. Cool product!

I read lots and lots of reviews before buying this pan (including many websites other than Amazon.com). For the price of this pan, I wanted to be sure it was something I was going to like before ordering.
I have only tried it twice -- the 1st time with a Betty Crocker Traditional/Original Brownie mix and the 2nd time using a Betty Crocker Chocolate Chunk Brownie mix. The first time, I found it a little difficult to pour the batter into the channels of the pan without getting it onto other parts of the pan. The batter was thin enough that I thought I would be able to shake the pan and get it leveled out. I eyeballed it and, very carefully (so as not to get batter up the sides of the pan), moved some of the thicker areas of batter into the thinner areas. Although I thought I had it level, as it was baking and rising, I could see that I did not. When testing for doneness, I chose to bake long enough to get the thickest section done, with the end result being that the thinner sections were too dry. Even my husband, who thinks anything chocolate can't be bad, thought they were too dry. I removed them from the oven 2 minutes before the minimum baking time (per directions on brownie mix box).
The mix I used the 2nd time was far thicker than the Traditional mix, so everything that I found "a little difficult" before was 3 times more difficult. I worked and worked at getting it spread into all the channels, determined to get the batter level this time. I checked for doneness 6 minutes before the minimum recommended baking time, but they were not done until the exact minimum baking time (per box directions). This time they were not dry, but the thicker sections were too gooey and underdone for my taste.
After reading all the good reviews and ordering it, I had planned on buying 2 more later to give as gifts to my daughter and my daughter-in-law. Now that I have used the pan a couple times and am finding it difficult to level the batter, I have decided not to. I don't really want to give a gift that requires warning the recipients of the problems they are likely to have with it.
Right now, I DO think this pan bakes more evenly than traditional 8 x 8 or 9 x 9 pans (I never use 13 x 9 pans for brownies), but spreading the batter evenly IS a pain. I don't understand why none of the other reviews mention the problem of getting the batter even.
I WILL say the quality/construction/material of this pan is excellent. I didn't grease the pan or use any cooking spray the 2nd time I used it, and the brownies still came out of the pan very easily--more easily than the other (greased) pans/baking dishes I used to use. Also, you would think this pan might be hard to wash with all the channels, but not so. It only takes about 15 seconds (no pre-soaking necessary) and it's completely clean.

And this is a good thing, because love elsewhere in the world seems pretty scarce right now. But not my Baker's Edge - this little baby has lovingly provided me with fantastic cookie bars, brownies, and of course - the no slide lasagna. Cooks quickly and evenly so even a dullard baker - like myself - is capable of baking great tasting and looking items for consumption.
Simply put, this pan is the Alpha Male in Jane Goodall's collection of bake ware - and it should be your's too. You will not be disappointed, I wasn't.

Oh, man, why didn't I think of this idea?! This terrific little item was my lovely birthday gift today, and I have delicious, chewy-edged brownies to show for it already! Yum, yum. They baked up perfectly and came out of the pan without a hitch. Even the drips popped right off, just like a nonstick pan should perform. The pan is a sturdy, solid hunk of aluminum that will no doubt last for years to come. Hand wash this pan and use the little included spatula, sized to fit through the channels. Can't wait to try other recipes. I promise you will love this pan, so get it right now!

I have to admit that I am not an edge brownie fan--I always will pull from the middle of the dish if possible. I was a skeptic until I ate my first cookie bar out of this pan. Even if you are not an edge fan, you will be a fan of this pan because it is the PERFECT solution for the uneven baking problem. I no longer have to throw away the edge corner brownies that are hard and that no one in my house will eat. I just bake the dish for slightly less time and I have no wasted pieces. I am and continue to be amazed at the quality of baking this pan provides. Not only is it the highest quality in construction but allows me to make dishes that are evenly baked and present nicely...EVERY TIME! Guests at my house get excited when they see that I have been baking in my Baker's Edge pan and I no longer have conventional 13X9 pans in my kitchen because the pan allows me the versatility of baking other things as well. Even if you are not an edge brownie fan or if you are also a skeptic...you MUST try this pan. I am confident that you will be the next one writing your review.

This pan has been a fantastic investment. It's been great fun and a great incentive to bake dessert. I love having homemade dessert around the house, rather than store bought cookies, and every brownie has come out perfectly tastey and with just the right texture.
The pan itself has been easy to clean, and very sturdy. It comes with its own smaller spatula that fits the channels in the pan.
I love making dessert in it, but I even tried lasagna once and it came out amazingly well! Each piece was nicely formed, and had all its layers in each serving. I'll definitely be exploring more options with it in the future.

I saw a review for this pan in the latest issue of Fine Cooking Magazine and knew I had to have it. I made brownies in it today and they turned out beautifully. The only thing wrong with the free spatula that came with it is that I am left handed and it is for a right hander. It is a perfect size to get through the channels in the pan tho. I think this is a great and unusual gift for anyone that bakes and for someone that might bake occasionally like me. Love it.

Why not just use a muffin pan? If you really like edges, a muffin pan gives the most edge surface.

I love brownies. I bought this pan mainly for it's unique design and features. This pan is excelent, it provides uniform cooking so you don't get burnt edges and soggy middle parts. It also makes easy to create uniform portions. I highly recommend this product to anyone who loves baking.

This is a wonderfully engineered product, a great concept well-executed, down to the detail of furnishing a plastic spatula made to fit without damaging the inner surface of the pan. I made brownies in it last night for the first time. After checking some great-sounding brownie recipes, I decided to make the recipe that came with the pan. My partner and I couldn't wait till the brownies cooled, so we sampled them while still warm. My memory will long savor that first bite as the best brownie I've ever had. Crunchy on the outside, soft, warm and chewie on the inside. The next brownie, this morning, was not disappointing either.
How to convert other recipes? The little booklet says you can use any recipe intended for a 9-inch square or 9 x 13 pan. That's a fairly wide range, and what about all the brownie recipes written for an 8-inch square pan? So I tried to calculate the surface area of the pan bottom. The problem is complicated by the irregular shape of this pan, plus the fact that the walls slant slightly and curve at the bottom. I filled a 9" round pan with two quarts of water and measured the depth it filled, slightly more than 1.75 inches (1 25/32"). Two quarts filled the Edge pan to a depth of almost 1.5 inches (1 7/16"). Based on the surface area of a round 9" pan being 63.64 square inches, I came up with a surface area of about 79 square inches for the Edge pan. By using simple measurements and deducting the crudely measured size of the intrusions, I came up with surface area of between 88 and 91 square inches. I am very disappointed that I couldn't get a more precise result. Maybe I made a mistake in calculations. A 9-inch square pan is 81 square inches and a 13-inch pan is 117 square inches. An 8-inch square pan is 64 square inches, and this suggests you should increase the incredients for an 8-inch recipe by 33% or 50%.
I guess I'll just cook some more stuff and see how it turns out.

This pan produced excellent edge pieces as expected. The narrow channels are difficult to fill with batter without some of the batter ending up where you don't want it. Cooking time is difficult to predict because it might not be the same time you use for your old pan. For example: Directions on boxes of brownies do not have cooking time for this pan. You will definitely have to use the toothpick test. I recommend taking notes of your baking times the first time you make each of your recipes. I found that brownies took 2-4 minutes longer in this pan than they would in a normal pan with the same dimensions. This pan is well made and easy to clean. Overall I do recommend this pan for edge lovers. The negatives do not out weigh the positives. I think I will make some Brownies right now!

I love this pan. I made brownies and they turned out fabulous. You can make them a little thicker by using two boxes or doubling your recipe. Just don't forget to alter your time. I just set the timer for half and checked on them frequently. It took about 20 minutes for brownies usually taking 35 minutes.

This is the BEST brownie pan ever!!! The brownies are perfect - lots of edges and still chewy and delicious in the middle. I am so happy to have found this pan. I will never use anything else for brownies (and I am sure it will be excellent with bars too)! If you love perfect brownies, do not wait - get this pan now. You will not be disappointed - the pan is wonderful and very high quality!

This Bakers Edge brownie (or bars) pan is a heavy duty nonstick wonder, but it needs far LESS time to bake than other pans! Using the "metal pan" directions on the box, bake 1/3 less time - they'e probably done! This pan overbakes easily. For instance the Ghirardelli brownie box says 45 min (at 325) for metal pans, and 30 minutes was plenty! Remember: "fresh baked brownies appear underbaked but cool to doneness." Wash this pan by hand - is not dishwasher safe - and use no metal utensils, then it'll stay good as new. PS: best brownie cookbook Amazon carries is "Brownie Points: " by Lisa Slater. Combined, pan & book make a great gift!

- Can't Get Enough

I saw this pan in a catalog and it immediately caught my interest. I checked Amazon, and all the reviews were so positive, I went ahead and ordered it, and it does not disappoint. I'm really the only "edge" lover in my family, but EVERYONE loves this pan. It just cooks perfectly and makes removal easy without mangling half the batch. We've tried several different mixes, and they all turn out great. In the past we made brownies once every couple of months ... should I be ashamed to admit that we've made them every night for a week since getting this pan? Pouring the batter in and getting it even is slightly more difficult that a regular pan (especially with thicker mixes) but well worth the effort.

I enjoy my chewy edges, but it's the uniformity that makes me love this pan. Because the edges surround each line of bars, it's easy to get a brownie with totally uniform consistency --no squishy interior brownies to avoid burning the edges. My first batch of brownies (peanut butter cheesecake swirl) with this pan was as good as any I've had in a cafe, and I've never considered myself an accomplished baker. The non-stick surface is almost magical, and the heavy construction is so much more than I expected. I thought I was getting a cute novelty item, but this is one incredible pan.

This was a great piece of cookware. I was impressed with the build quality. some may view this item as a novelty, and suspect (as I did) that he build quality would reflect this. However, the construction is excellent and the performance even better.

I highly doubt you need my words by this point after reading even the first couple of reviews opinions. Seeing 51 reviews and 5 SOLID STARS alone should be enough for you. However if you're still not convinced, then I encourage you to take a look at the 1 idiot who did give it just 1 star and the 1 person who gave it just 3 stars. You'll see guy #1 didn't actually buy it and gave it 1 star because he thought the shape was just dumb. You'll see that guy #2 purposely over baked his BOXED MIX brownies because they thought they had to allow for more time for the brownies to bake evenly and/or completely (a common mistake people make that results in DRY brownies). All brownies are STILL gooey in the center when you remove them. An inserted toothpick should come out MOSTLY clean, but oven has just a few little crumbs or streaks on it (depending on whether or not you used chocolate chips in the brownies and how you prefer them as well).
The first thing I did was make the included recipe that came with the pan. "Chef Emily's Chewy Edge Brownies." I deduced that if there was a recipe that came with a pan that was actually made in the U.S.A. I could both trust that they had the intelligence to make sure the recipe worked perfectly in the pan that they are selling and that it was included for a reason.
I had never made brownies from scratch but I took one look at the recipe and thought, "I have everything this calls for already (it's really common stuff) and it looks dead simple to do." Off I went. I have to say there wasn't much more involved in "from scratch" brownies (at least this recipe) compared to a box mix. For the difference between this and boxed mixes, I will ALWAYS make this recipe instead. Well worth the little bit of extra effort. These are the absolute best brownies my wife & I have ever had!
She scoffed at me when I told her I was spending $35 on a brownie pan. After she had that first batch I made her retract her statements as she rolled her eyes in chocolate pleasure. This is the absolute best piece of bakeware we have ever bought, both in quality and practical use ideology.
Again, 51 reviews with a cumulative 5 STAR RATING does NOT lie.

This is the best brownie pan I have ever purchased. Made of high quality non-stick material. The brownies cooked evenly and were so easy to cut (spatula included) and remove. The pan also cleaned up easily with a sponge and soapy water - no burnt batter to scrape off. If you are questioning the idea of spending $35 for a brownie pan - buy it because it will be the last brownie pan you will ever need.

My fiance received this as a gift for Christmas. We just used it tonight, and love it. The nonstick coating is the best we have ever seen. The brownies came out of the pan so clean, that it looked like it didn't even need to be washed (which we did anyways!). I love the heavy weight of the pan. We are very pleased and will recommend this to others!

i thought since this is sort of a novelty item that they would compromise quality for a cutesy idea. turns out this pan is extremely well made. it was completely nonstick, cleaned up in about 10 seconds, and comes with a perfect-sized spatula to fit in between the "aisles" of the pan. the brownies cooked very evenly and the recipe didn't really need to be adjusted at all. i love it!

Ok, so I do have to agree with the person who gave 1 star...I never would have though to just use a muffin pan...really good point, but regardless, I didn't think about that, got the pan for my birthday and LOVE the brownies it makes. If you do like edge brownies and don't want to use a muffin pan, you totally need to get this pan!
